MINERAL COMPOSITION AND Ca/Zn BIOAVALABILITY OF MENTHA PIPERITA

ABSTRACT
In macro-elements estimation, potassium was the highest macro-element present in peppermint tea while phosphorus was the least mineral present in the tested tea extract. Peppermint tea has the highest concentration of Zinc, Nickel and Copper. The predicted calcium and zinc bioavailability for the teas extracts showed that [Phytate]/[Calcium], [Oxalate]/[Calcium], [Phytate/Zinc] and [Calcium][Phytate]/[Zinc] were below the critical level and that peppermint tea had significant amount of calcium and zinc absorption utilization.
