MINERAL COMPOSITION, CA/ZN BIOAVALABILITY OF GREEN TEA (CAMELLIA SINENSIS) AND CHAMOMILE (MATRICARIA CHAMOMILLA)

ABSTRACT
In macro-elements estimation, potassium was the highest macro-element present in green tea chamomile tea and composite blend (GT+C) tea while phosphorus was the least mineral present in the tested teas extract. Iron is the highest micro-elements present in the tested tea infusion. The predicted calcium and zinc bioavailability for the teas extracts showed that [Phytate]/[Calcium], [Oxalate]/[Calcium], [Phytate/Zinc] and [Calcium][Phytate]/[Zinc] were below the critical level and that green tea had the highest calcium and zinc absorption
utilization compared to the chamomile tea and composite blend (GT+C).
