PREPARATION AND STANDARDIZATION OF CHIKKKI FROM GROUNDNUT (ARACHIS HYPOGAEA) AND RAGI (ELEUSINE CORACANA) ITS STORAGE STUDIES.

ABSTRACT
Chikki, a popular Indian traditional sweet snack prepared from groundnut was enriched with protein, minerals and vitamins by incorporating finger millet (ragi) to meet the growing demand for health foods. The ragi incorporated groundnut chikki was evaluated for physic-chemical characteristics such as moisture, texture in comparison with control (T0) groundnut chikki. The formulation and process parameters for preparation of protein, mineral enriched groundnut chikki were standardized. The storage stability and quality parameters of enriched chikki were comparable with those of control chikki and T1 showed best quality parameters among all treated sample.
