TO STUDY THE EFFECT OF TEMPERATURE ON LIPASE

ABSTRACT
Lipase a pancreatic enzyme that catalyses the breakdown of fats to fatty acids and glycerol or other alcohol. Lipase enzyme isolated from suitable microbial sources. Lipase are more suitable enzyme for industrial and diagnostic purpose. The temperature is physiological factor that affects the activity of enzyme. The effects of temperature on lipases production were studies using experimental plan. Different temperature like 10°C, 20°C, 30°C, 40°C, 50°C, 60°C, 70°C, 80°C, 90°C, 100°C were used. Statically analysis of result was performed to
evaluate the effect of the studied variables on the maximum lipases activity. Increases in the temperature of system result from increases in the kinetic energy of the system. This has several effects on the rates of reactions are more energetic collisions, the number of collisions per unit time will be increase, the heat of the molecules in the system will increase.
