ASSESSMENT OF NUTRITIONAL AND ANTIOXIDANT PROPERTIES OF FRESH AND DEHYDRATED POMEGRANATE PEEL POWDER

ABSTRACT
The study was carried out with objectives to determine the nutritional
composition and antioxidant activity of fresh and dehydrated
pomegranate peel. Chemical analysis for proximate content was done
by using the standard procedures of AOAC. Iron, calcium and Vitamin
C were determined by Thiocyanate method (colometric), volumetric
method and 2,6-Dichlorophenol dye method respectively. Polyphenol
content and % radical scavenging activity were assessed by the Folin-
Ciocalteu method and DPPH method respectively. Moisture in fresh
and dehydrated peel was found to be 64% and 6.5% respectively while
ash content of fresh and dehydrated peel was 5 and 6.14%.
Carbohydrate content was found to be in the range of 26.1g and 72.7g
and protein was 3.5g and 12.2g. Micronutrients contents such as Iron, calcium, Vitamin C it
was found to be in the range between 8.28 and 25.8mg, 65 and 338mg, 18 and 21mg
respectively and energy ranged between 131kcal and 361.2kcal.
