ABSTRACT
Fishes are important nutritious food around the world. In the attempt of
exploring the edible coating of chitosan in increasing shelf-life of fish
in cold storage, the present study deals with antimicrobial activit y of
chitosan against selected pathogens which are isolated from fishes
Lethrinus spp. and Sillago sihama. The chitosan concentration of 30,
60 and 90 μg/ ml were used for anti-microbial activity. Our study
shows that chitosan at a concentration of 90 μg/ml exhibits apprecial
antimicrobial activity against the pathogens isolated from fish samples.
It postulates a notion that chitosan coating will prevents the invasion of
microbes and thie spoiling action in fish spoilage.
Keywords: Fish spoilage, Chitosan, edible coating and shelf life.
