STRUCTURE-MODIFYING PROPERTIES OF GLUCOSE AND FRUCTOSE IN AQUEOUS KBR AND NACL AT 298.15 AND 313.15K A STUDY

ABSTRACT
The volumetric and viscometric studies of glucose and fructose have been determined in 0.05M and 0.5M KBr and NaCl solutions at 298.15and 313.15K.The apparent molar volume (v) values vary linearly with square root of concentration of KBr and NaCl solution. The limiting apparent molar volume (0v) has been interpreted in terms of solute-solvent interaction. The 0v values vary with temperature and can be represented in the power series of structure modifying capacity of electrolyte KBr and NaCl is inferred from the sign of dB/dT values. The apparent molar expansibility has also been determined Sugars have been found to be structure-maker/breaker in aqueous KBr and NaCl from molar volume i.e. Density as well as viscosity studies.
