THE INTERACTION OF BARLEY-? AMYLASE WITH ANTIOXIDANT FLAVONOID IN ANIONIC SURFACTANT SLS

ABSTRACT
The results of the studies of fluorescence quenching of Barley-α
Amylase (B) by an antioxidant flavonoid Amantadine (AMT) in
anionic surfactant Sodium Lauryl Sulphate (SLS) solution has been
presented in this paper. The interaction of the anti-oxidant flavonoid
with B was studied by UV/visible and fluorescence spectroscopic
techniques. Using fluorescence study, the binding constants K for the
binary complexes of antioxidant flavonoid and Barley-α Amylase were
calculated. The number of binding sites was calculated. Using the
calculated binding constants, thermodynamic parameters and the
nature of the binding forces were determined. The calculated micelle
parameters were also tabulated.
