THERAPEUTIC ANTIDIABETIC BISCUIT – AN EFFECTIVE FUNCTIONAL FOOD

ABSTRACT
Most of the people throughout the world suffering from malnutrition, obesity and Diabetes. Biscuits are prominent and ready to eat baked snack among the people globally. Diabetic people when consume fibre rich biscuits will maintain their blood glucose level, and regular intake of Cassia auriculata will help to treat diabetics. Thus, biscuits made with Cassia auriculata and Borassus flabellifer will help in maintaining the blood sugar level in the body. Our study aims to obtain a therapeutic biscuit from Cassia auriculata (Avarampoo) and Borassus flabellifer (Panakilangu). The biscuit prepared was evaluated by various analysis such as, Organoleptic test, checking physical properties and shelf life of biscuit, preliminary Phytochemical analysis,
Estimation of protein, carbohydrates and lipids, Antibacterial and Antidiabetic tests.
