FORMULATION AND CHARACTERIZATION OF THE EDIBLE FILM FROM THE BANANA COMBES (MUSA BALBISIANA COLLA) WITH PROPYLENE GLICOL AS PLASTICIZER

ABSTRACT
Banana weevil has not been used optimally and is considered a part that cannot be utilized so that many do not use it, even though banana weevil has a composition of 76% starch. Starch is one of the basic ingredients for the manufacture of edible films physical properties , brittle a plasticizer. In this study, edible films were made from kepok banana hump starch using plasticizer propylene glycol Edible film made with plasticizer propylene glycol 1,5 (F1), 2 (F2), 2,5 (F3) with 5 grams of starch in 100 mL of water. The concentration of plasticizer is 30-50% of the amount of starch with the preservatives used nipagin
0.05% and nipasol 0.1%. The principle of making edible films is gelatinization with the solvent casting. The evaluation of edible film includes organoleptic, thickness test, pH test, water content examination, absorption test, percent elongation, attractiveness, Young's modulus and water vapor transmission rate whose results were analyzed using ANOVA using SPSS 25.0 statistical software. From the evaluation that has been carried out, it was found that the three formulas met the characteristics of edible film, with the results of the absorption test at 6 minutes, Young's modulus, and the water vapor transmission rate respectively F1 (62.1629, 1.1964, 1 0.0110), F2 (103.1002, 1.4644, 1.2913) and F3 (90.3205, 1.6623, 1.2873).
