Abstract

EXTRACTION OF ANTHOCYANIN FROM IPOMOEA QUAMOCLIT FLOWER AND IT ANTIOXIDANT PROPERTIES

ABSTRACT

In the present study, anthocyanin pigments were extracted from Ipomoea quamoclit flower by two solvent systems, methanol and acidified methanol extracts and its antioxidant activity were analysed. The acidified methanol extract showed good antioxidant activity than methanol extract and the stability analysis of anthocyanin were also performed in both extracts.
