FOOD SAFETY AND ITS MITIGATION

ABSTRACT
Food is a basic need of life; hence food safety is an essential human right. Billions of people in the world are at risk of unsafe food. Millions of people become sick while hundreds of thousands die yearly. The food chain begins from farm to fork/plate while challenges include microbial, chemical, personal and environmental hygiene. An estimated 600 million people – almost 1 in 10 people in the world – fall ill after eating contaminated food and 420 000 die every year resulting in the loss of 33 million healthy life years (DALYs). In India nearly 100 million cases of food borne diseases (FBD) are reported annually. This corresponds to around one in 12 people falling ill of FBD. There are around 120,000 deaths each year and FBD imposes a burden of over 8 million Disability Adjusted Life Years (DALYs).
