ENZYMATIC GLYCOSYLATION OF CURCUMIN USING GLYCOSYLTRANSFERASE OLED VARIANT ASP FROM STREPTOMYCES ANTIBIOTICUS

ABSTRACT
The objective of this study is to explore the glycosylation of curcumin with glycosyltransferase OleD variant ASP. Firstly, the glycosyltransferase OleD (ASP) was expressed in Escherichia coli Transetta (DE3) and purified with nickel column. Then curcumin was glycosylated with the purified OleD (ASP), and the biosynthesis products were analyzed by HPLC and LC-MS. It was found that OleD (ASP) could convert curcumin to monoglycoside, diglycoside and triglycoside.
