ABSTRACT
Potatoes (Solanum tuberosum L.) are a great source of carbohydrates which are used as food, industrial raw materials, and animal feed. Potatoes (Solanum tuberosum L.) are known to contain vitamin C and anthocyanin flavonoids as natural antioxidants. Natural antioxidants can be obtained from yellow potatoes (Solanum tuberosum L.) which are known to have relatively high antioxidant activity. Antioxidant compounds function to ward off free radicals (molecules or atoms whose chemical properties are very unstable) that damage skin tissue. Anthocyanins are positively charged molecules derived from plants belonging to the flavonoid group, found in various pigmented Solanum tuberosum L. associated with various diseases, cancer, cardiovascular
disease, cataracts, atherosclerosis, diabetes, arthritis, immune deficiency diseases, and aging.
