EVALUATION OF HACCP PREREQUISITE PROGRAMS IN BEEF MEAT EXPORTATION SLAUGHTERHOUSE AT KHARTOUM STATE, SUDAN

ABSTRACT
A descriptive and experimental method was used aiming to assess the HACCP prerequisite programs (PRPs) in a Beef Meat Exportation Slaughterhouse and transport trucks at Khartoum State, Sudan. A constructed checklist was developed and applied to all meat-processing parts. The checklist was divided into a number of 20 elements, and further these elements were assigned a series of parameters to accurately describe the status of each assessed element. Each item under assessment was scored and points were assigned. The results indicated that one of the PRPs was "Satisfactory" which equaled 7.7%, 5 of them were "Acceptable" which equaled 38.5% and 7 were "Unsatisfactory" which equaled 53.8%. Hence, this result indicated
that this slaughterhouse had failed the evaluation of the PRPs and adequacy.
