STUDIES ON CHEMICAL RESIDUES IN POULTRY MEAT AND SOME POULTRY MEAT PRODUCTS WITH ESPECIAL REFERENCE TO ANTIBIOTICS RESIDUES

ABSTRACT
The present study was evaluated to determine antibiotic residues (tetracycline and gentamicin) and heavy metal residues (cadmium) in raw chicken, chicken nuggets and chicken frankfurter from local markets of Cairo city, Egypt. Exactly 240 samples of raw chicken (breast muscle), chicken nuggets and chicken frankfurter (80 of each) were collected and estimated their residual content. The results revealed that, the mean value (ppb) of tetracycline residues in raw chicken, chicken nuggets and chicken frankfurter were (2159.8 ± 422.51), (3837.813 ± 379.8) and (3130.5 ± 303.11), respectively, while
the mean value (ppb) of Gentamicin residues in raw chicken and chicken frankfurter were (4741.5 ± 965.04) and (7189.936 ± 2029.66), respectively. Also the mean value (ppm) of cadmium in raw chicken, chicken nuggets and chicken frankfurter were (0.073 ± 0.006), (0.08125 ± 0.014) and (0.0355 ± 0.006), respectively. According to Egyptian organization of standardization (EOS) 2010 which recommended that MRLs of tetracycline residues in meat is (100 ppb) 12.5%, 40% and 25% of the examined samples of raw chicken chicken nuggets and chicken frankfurter proved to be unaccepted, respectively and MRLs of gentamicin residues (50 ppb) 5% and 58.75% of the examined raw chicken and chicken frankfurter proved to be unaccepted, respectively. MRLs of cadmium residues in meat is (0.05ppm) 100 % , 40% and 17.5 of the examined samples of chicken nuggets, raw chicken and chicken frankfurter proved to be also unaccepted, respectively.
