ABSTRACT
In the present work of four different groundnut varieties such as AK-12-24, Tag-1 (Tg-1),Tag-17(Tg-17)and kopargaon-1(K-1) were grown under different geographical places of India which are widely consumed were studied. The proximate analysis, oil yield and physicochemical characteristics of collected groundnut seeds and their extracted oils were determined for their nutritional assay. It was found that the seeds contained in the range of extracted oil, moisture, crude protein, total ash, crude fat, crude fibre, carbohydrate and calories per 100gms were 38.26-40.9 % (±0.5577), 2.12-2.72% (± 0.1256),27.5
30.13% (± 0.6023),1.8-2.2 % (± 2.316), 27.82-30.02 % (± 0.4075), 1.98-2.4 % (± 0.0982), 33.98-37.17% (±1.4767) and 511.58-524.1 (± 5.2561) respectively. The specific gravity, viscosities, impurities and refractive index of the extracted groundnut seed oil and colour were in the range of 0.9152-0.9157 (± 0.2886), 91.57-91.62(± 0.0064), 0.022-0.04(± 0.0027),1.4628-1.4634(± 0.00) and 1.2-1.6 (± 0.032) respectively. AV (mg KOH/g oil), IV (g I2/100 g oil), SV (mg KOH/ g oil), unsaponifiable matter content (%) and ester value of the extracted oil from groundnut seeds were in the range of 1.77-2.33(±0.1491),89.57-92.8 (±0.6156),192.76-194.45 (±0.4402),0.49-0.62(±0.0112) and 190.43-192.13(± 0.4767) respectively. This study is empirical and on the basis of finding it is revealed that groundnut seed oil can be a valuable source of edible oil.
