Abstract

CONTRIBUTION OF OKRA (ABELMOSCHUS ESCULENTUS L.) SEEDS TOWARDS THE NUTRITIONAL CHARACTERIZATION

ABSTRACT

In the present investigation biomolecular characters in okra seeds were estimated. The result of this study revealed that genotype GAO 5 contained the highest oil (14.40%), ash (5.21%), total soluble sugars (7.39%), protein (18.96%) and magnesium (0.123%). The antinutitional factor, saponin (1.28%) was recorded lower as compared to other genotypes. The highest mucilage (21.02%) was recorded in genotype AOL-13-73. Genotype AOL 10-22 recorded highest content of phenol (0.68%) and fibre (3.39%). The total antioxidant activity was observed only in wild type genotype. Total carbohydrates was recorded the highest in AOL 13-90 (29.82%).The highest amount of free amino acid, reducing sugars and calcium was recorded in genotype AOL 13-75 whereas lysine was higher present in pusasawani. Genotype AOL 13-90 recorded the highest metheonine. AOL 13-88 was registered with higher tryptophan content and lower antinutritional constituents such as oxalic acid and phytic acid.
